Chocolate Mousse Cake White & Dark

For the sponge cake:
- 2 eggs;
- 3 tbsp Sahara;
- 1 tbsp cocoa powder;
- 2 tbsp flour;
- 0.5 tsp disintegrant.
Mousse of dark chocolate:
- 75g. butter;
- 3 egg whites;
- 200 ml. cream 33-36%;
- 100 gr. dark chocolate;
- 6 grams of gelatin;
- 100 ml. water.
White chocolate mousse:
- 75g. butter;
- 3 egg whites;
- 200 ml. cream 33-36%;
- 100 gr. white chocolate;
- 6 grams of gelatin;
- 100 ml. water.
Ganache:
- 100 gr. dark chocolate;
- 80 ml. cream 33-36%.
