Today we are making a super delicious:
Cayenne Chocolate Molten Lava Cake with a Caramel Cage and Raspberry Air.
What you need:
1 stick ( 4 ounces ) unsalted butter 6 ounces bittersweet chocolate,
( preferably Valrhona chocolate )
2 eggs
2 egg yolks
1/4 cup sugar
pinch of salt
2 tablespoons all-purpose flour
1/2 teaspoon cayenne pepper
Carmel Cage - 1 cup sugar.
Raspberry Air - 2 cups fresh raspberries, 2 grams soy lecithin, 1 cup water.
