My favorite recipes are simple to make, nutritious, and free of unhealthy additives. Although you can buy sauerkraut, you can't really control what goes into it. This Sauerkraut recipe is amazing and I munch on a couple tablespoons at least twice a day. It's delicious, nutritious and sooo easy to make. The ingredients are inexpensive but it requires a little patience during the fermentation process.
It is half the original recipe from www.fermentedfoodlab.com. Simply double the ingredients if you would like to make more.
Ingredients
½ head of cabbage
¼ pineapple
½ tbsp ground turmeric
½ tbsp finely chopped or grated ginger
½ tbsp salt
For the Brine:
2 cups filtered or spring water
½ tbsp salt
Instructions
1. Shred the cabbage in a food processor.
2. Shred or chop the pineapple and add it to the cabbage.
3. Add the salt and ginger and mix well for about 2 minutes.
4. Mix the turmeric in with utensils to avoid staining your hands.
5. Pack the sauerkraut mix into three 16 oz mason jars.
6. Add the brine to each jar leaving about ½”-1” of space at the top of the jar. The space at the top will prevent it from spilling over the top as it ferments.
7. Once daily open the jars to burp them and to check for mold. If no mold, return the lid, turn over the jar and rotate so all the sauerkraut comes into contact with the brine.
8. Don't close the lids too tightly and store in a cool dark place for 5-7 days. Warmer climates/ambient temperatures will require less time.
9. Refrigerate for up to a month for best results.
10. Enjoy!
Warning: This sauerkraut is very addictive.
Not a bad thing considering every mouthful is packed with trillions of resilient probiotics. In fact 2 oz of homemade sauerkraut can have more probiotics than 100 store bought probiotic capsules. Not to mention the relative fragility of the store bought kind.
And what about all those enzymes? Not only does sauerkraut contain natural digestive enzymes that reduces inflammation but it also promotes enzyme production in the body.
Before I learned about the health benefits I never ate it. Now that I have tried it I love it! I'm a big fan of pickles, and this gingery treat is much tastier.
