This is my first recipe of Halloween recipes 2018. Based on Halloween Jack O lantern, I used carved Halloween pumpkin ghost face into paprika. Using zucchini noodles as a raw vegan recipe, it will add freshness to the dish. I recommend this healthy and delicious Halloween vegan recipe for Halloween day dinner!
* Ingredients (serves 2 people) :
- 3 paprika
- 1 cup of cashew nuts
- 1/2 lemon
- 1/2 cup water
- 1 tablespoon chopped garlic
- 1/2 teaspoon seasalt
- a pinch of ground pepper
- 2/3 of zucchini
* How to make :
- Cut off the top of 3 paprika and make cuts in the shape of a Halloween pumpkin face
- Sieve 1 cup of cashews soaked in water and put them in a food processor
- Squeeze the juice of half a lemon and put it into a food processor
- Put 1/2 cup water, 1 tbsp garlic, 1/2 tsp salt, and a pinch of ground pepper in the food processor
- Put the cream sauce in a bowl
- Cut both ends of the zucchini and make zucchini noodles with a spiralizer
- Cut long zucchini noodles with kitchen scissors in a good length to eat
- Pour the cream sauce over the zucchini noodles and mix well
- Place zucchini noodles in jack o lantern paprika dish

할로윈데이를 맞아 로푸드 비건 할로윈데이 레시피를 준비해 보았습니다. 할로윈 잭오랜턴을 모티브로 하여, 파프리카에 할로윈 호박귀신 얼굴을 새겨넣고 맛있는 로푸드 비건 크림파스타를 담아 근사한 한끼를 만들었답니다. 쥬키니 호박 면을 사용한 로푸드 레시피 겸 비건 레시피 랍니다. 건강하고 맛있는 할로윈데이 저녁 요리로 추천합니다! :)
* 재료 (2인분) :
- 파프리카 3개
- 캐슈넛 1컵
- 레몬 1/2개
- 물 1/2컵
- 다진마늘 1큰술 또는 마늘 1톨
- 천일염 1/2작은술
- 후춧가루 한꼬집
- 쥬키니 호박 2/3개 (외호박)
* 만드는 방법 :
- 파프리카 3개의 윗 뚜껑을 잘라낸 후, 할로윈 호박 얼굴로 파냅니다
- 물에 불려놓은 캐슈넛 1컵을 체에 걸러 푸드프로세서에 넣습니다
- 레몬 반 개의 즙을 짜서 푸드프로세서에 넣어줍니다
- 푸드프로세서에 물 1/2컵, 마늘 1큰술, 천일염 1/2작은술, 후춧가루 한꼬집을 넣고 갈아줍니다
- 만들어진 크림 소스를 볼에 담습니다
- 쥬키니 호박의 양끝을 잘라준 후 회전채칼로 파스타 면을 뽑습니다
- 긴 쥬키니 호박면은 먹기 좋은 길이로 주방가위로 잘라줍니다
- 쥬키니 호박 면 위에 크림소스를 부어 버무려줍니다
- 만들어 놓은 잭오랜턴 파프리카 귀신 그릇 안에 파스타를 담아줍니다
