Ingredients
300g dark chocolate
60g egg whites
5g egg white powder
1. Put a bowl onto of a pot of boiling water. Put the dark chocolate into this bowl, and stir as the chocolate starts to melt.
2. When the chocolate has melted, add 300ml of water into the chocolate.
3. Add the egg white powder into the egg whites and let it sit for 5 minutes. Stir to combine, then add into the chocolate mixture.
4. Whisk the mixture for a few minutes. Take it off the heat.
5. Using a hand blender, blend the chocolate mixture. Leave it aside to cool.
6. Put 660g of the chocolate mixture into a siphon. Place two charges into the siphon, turn it around, and shake it.
7. Pump out the mixture into any container of your choice. Place in the freezer.
8. When it has frozen, break into smaller pieces and serve as you like.
