I made Pulled Chicken sandwiches for my meal in this week's swap (make one meal x4 and swap with three other families who do the same = cook 1 night and eat for 4 ;-)
Costco was out of sauce so I just bought ketchup knowing how easy it is to make my own + cheaper!! In the video I doubled this recipe and made about 6 cups.
Here is how to make more like 3:
Sautee
1/2 Large Onion, chopped
3-6 Cloves Chopped
in 1/4 Cup Olive Oil
After about 5 minutes add:
1.5 T Chili Powder
1/2 t Paprika
1/2 t Salt
1 t+ Pepper
Mix the above and then add
2 C Ketchup
3/4 C Brown Sugar
1/4 C Vinegar
1/3 C Yellow Mustard
1/4 C Worcestershire Sauce
Simmer uncovered for an hour on low so you don't make a giant mess and then place it in the fridge. It gets better, like soup, the longer it sits for give it a day or two and enjoy! I usually keep it for a bout 7-10 days.
+ Sriracha if you want a spicy sauce ;-)
