I am really in love with famous amos cookies. It is very sweet, delicious chocolate taste, crunchy texture, and the shop has an amazing aroma! One thing that I mind about the cookies is the price ;p
Because I am craving for more cookies, I have been searching the internet for the recipe, found one website, and follow the instructions.
I have made this cookies three times with some modifications in each time, and if you want to follow the original recipe by the "inventor" of the "almost famous amos cookies", you can check the website directly. http://www.bisousatoi.com/2010/03/famous-amos-chocolate-chunk-cookies.html.
In here, I am showing the recipe with some of modifications, because I prefer more nuts and chocolate, also extra oats and ground almond (it said that these two ingredients create crunchy texture, so I add double, I really want my cookies to be super crunchy, hehe)
Difficulty: Easy
Preparation time: 30 minutes + (at least 2 hours for the flavors infuse to the egg)
Cooking time: 30 minutes
Ingredients:
1 large egg + vanilla extract + ½ teaspoon coffee oil/coffee extract = mix well and let them sit for at least 2 hours (ALERT: Do not put too much coffee oil/ coffee extract, otherwise you will have coffee cookies!) I did once before, It has chocolate taste, but smell like coffee, not very good! We just want to have background note of coffee aroma to deepen the chocolate flavor. If your cookie dough has strong smell of coffee after mixing all of the ingredients, bigger chance you'll end up with coffee cookies.
226 gr (1 cup) unsalted butter
200 gr (1 cup) light brown sugar (I used white sugar because I don't have it at the time)
½ cup (65 gr) ground almond
½ cup (45 gr) quick oats
275 gr (2¾ cup) all purpose flour
1 teaspoon baking powder
2 tablespoon (10 gr) cocoa powder
Pinch of salt
½ cup of nuts of your choice (I used macadamia nuts)
¾ cup chocolate chips/ chocolate chunks (you can add more if you like more chocolate bits)
After mixing, keep the dough in the fridge overnight to create deeper chocolate flavor and sweeter cookies (I know it is very hard!! Just want to put them in the oven and eat them straight once they are baked). But.... The flavor and aroma are much much much more better if you keep them!! Trust me! ;p
If you want to try, you can try to bake some first, and bake again the one that is kept for at least one night and compare the taste! =)
Result (if compared with the original): The texture is crunchy (similar), but my cookies are denser and more compact, unlike the original cookies, more light and has some air holes (is that because of the baking soda/baking powder??)
The color is similar/ almost similar (depends on your sugar color), and the taste is almost similar. If you use a good quality ingredients (i.e. good chocolate, good butter), the taste will be much more better! :)
