Ingredients:
6 Tbsp of butter
6 Tbsp all purpose flour
1/2 cup diced yellow onion
2 (14 ounces) can low sodium chicken broth
2 cups half and half
1 (8 ounce) block of cheddar cheese (I used mild) grated
Salt, to taste (I used 1-1/4 tsp)
Black pepper, to taste
1 tsp garlic powder
1/4 tsp nutmeg
3 cups of fresh broccoli florets (I cut each floret in half)
Instruction:
1. In a large pot over medium high heat, melt the butter, add onions and cook for 3-5 minutes or until crisp-tender, stirring occasionally. Whisk in flour until combine and cook for 2 minutes.
2. Add broth and whisk until the flour has dissolved. Add half and half, garlic powder, salt, pepper, and nutmeg, mix everything to combine, add broccoli and give it a good stir. Lower the heat to low, cover and simmer for 20-25 minutes.
3. Add cheese and stir until is melted, turn the heat off and serve right away.
Serve with a crusty bread, YUM!
