Chicken Cheese Muffins - one of my favorite recipes. It’s very nice as a snack, for a party, for a picnic in the summer. Or for your kids when they go to school. Combining eggs, cheese, and chicken, these are perfectly portable for breakfast on the run.
The recipe is very simple. There is a basic recipe, and then, you can add whatever ingredients you like.

Chicken And Cheese Muffins With Tomatoes. Recipe
Ingredients
100-120 g chopped boneless chicken
2/3 cup cheese, grated + 2 tbsp cheese, grated
2/3 cup flour
2/3 cup tomatoes, chopped
1/3 cup milk
2 tablespoons vegetable oil
1 egg, lightly beaten
1-2 teaspoons parsley, chopped
Salt, pepper to taste
1. Preheat the oven to 400°F/205°C. Grease a muffin tray lightly.
2. In a bowl mix the flour, salt and pepper (as per taste).
3. In another bowl, beat together the egg, chicken, 2/3 cup cheese (grated), vegetable oil, parsley and milk until combined. Add 1/3 cup tomatoes. Pour the chicken-cheese mixture into the flour and mix to combine.
4. Pour the chicken-flour mixture into the muffin pan. Press 1/3 cup tomatoes (chopped) and 2 tbsp cheese, grated into the top of each muffin.
5. Bake in a preheated oven to 400°F/205°C for 20-25 minutes or until golden. Using a toothpick inserted in the center to test for doneness.
Serve warm or at room temperature.
