What You Need:
For Cake:
1 box white cake mix
Red and green dye
For Rum Glaze:
1/2 cup sugar
1/4 cup water
Nip of rum
Cream Cheese Frosting:
1 block cream cheese
1/2 stick butter
2 cups powdered sugar
Glitter sugar to decorate
1. Mix a white cake to box instructions. Divide in half and dye one red and the other green. Pour each into a parchment lined sheet pan. Bake in a 350 degree oven for about 15 minutes or until toothpick comes out clean.
2. Punch out circles from the cakes, each cake should render about 6 large circles. Allow to cool completely.
3. For glaze: In a small saucepan, add sugar and water and bring to a boil. Turn off the heat and add a little rum. Brush one side of your red and green rounds with the rum glaze over a cooling rack.
4. For frosting: add all ingredients in a bowl and whip for five minutes. Place in the fridge for at least two hours before using.
5. Assemble cakes alternating layers of red and green with frosting in between. You should have three four layer cakes. Slice and enjoy.
