Ingredients:-
Lady fingers
4 oz cream cheese or mascarpone cheese in room temperature
3 cups whipping cream
2 tsp vanilla extract
1/4 cup sugar
2 cups chopped strawberry very small for sauce
½ cup orange juice. Preferably fresh
1/4 cup sugar
1 cup sliced strawberry for filling
Whole Berries for topping such as strawberry, raspberry , blackberry and blueberry
4 oz white chocolate (optional)
Pink or red food color (optional)
Steps:-
1-How to make strawberry sauce.
In a small pot and over low heat, mix 2 cups chopped strawberry and 1/4 cup sugar until the sugar is dissolved and the strawberry get soft. Add orange juice then smash the strawberry With the fork or with electrical mixer. let the sauce cool completely.
2-How to dip lady fingers with chocolate ( This step is optional)
-Cut a small part like 1/4 inch of one end of the lady fingers that will fit inside the circumference of the springform pan size 9 inch.
-Melt white chocolate in the double boiler method or in the microwave.
-In a small bowl take about 1 tbsp of melted chocolate then add a few drops or food color and mix well then add this to the rest of the melted chocolate while it is still on double boiler. This way you will not shock the chocolate and turn it into grainy texture. The best is to use oil based color but I used jell color and it wasn’t bad.
-Dip the top of the lady fingers with melted chocolate and arrange them on a sheet that lined up with parchment paper.
-Freeze them for about 10 minutes.
3-How to make whipped cream
-Whip cream cheese with electrical mixer then add sugar and continue whisking until sugar is dissolved and the cheese is light and fluffy.
-In another bowl whip the whipping cream with vanilla until it becomes stiff.
-Fold in whipped cream little by little into cream cheese.
4-How to put the Tiramisu together
-Spread a small amount of the whipped cream on the bottom of the springform pan.
-Arrange the lady fingers cut side down and chocolate side up around the circumference of the springform from inside.
-Dip lady fingers in the cooled strawberry sauce and arrange as the first layers.
-Spread a good amount of the whipped cream on top.
-Distribute strawberry slices.
-Add another layer of the dipped lady fingers then another layer of the whipped cream.
-You can make two layers or three depends how many lady fingers you have. Mine were enough for two layers.
-Decorate with whole berries as you like.
-Refrigerate at least 4 hours or overnight.
Note:
The amount of the sugar adding to the sauce and whipping cream is depending on how much sweet you want your cake to be. So add less or more as per your taste.
