Mother's Day Pumpkin Cake

Ingredients:
4 eggs
1 cup granulated sugar
1 cup vegetable oil
2 cups all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
2 cups peeled coarsely shredded pumpkin
1 tbsp cinnamon
1 tsp mixed spice
1 tsp nutmeg
1 1/2 vanilla
1 tsp yellow almond extract
3 tbsp mixed fruit ( optional )
