OATMEAL BAKE
SERVINGS: 2-3 HUNGRY PEOPLE / 4-5 NORMAL PEOPLE
Ingredients:
3 dates (add more for a sweeter oatmeal bake, less for less sweet)
2 bananas peeled
2 eggs
2 cups milk of choice (almond, whole, coconut, etc)
2 cups slow cooking oats
1 tsp cinnamon
1/2 tsp salt
1 tsp baking soda
2 TBS chia seeds
1-2 TBS butter
2 cups fruit of choice (I use blueberries, but you can use any fresh or frozen fruit)
Optional extra add-ins: walnuts, pecans, vanilla, bananas sliced on top, apples.
Directions: Combine wet ingredients by blending together dates, bananas, eggs, and milk until smooth. Combine the dry ingredients (oats, cinnamon, salt, baking soda, and chia seeds) in a bowl. Pour the wet ingredients into the dry ingredients and mix.
Butter an 8x8 pan. Fill the bottom of the pan with frozen or fresh berries of choice. The fruit should be one layer completely covering the bottom of the pan. Pour the batter on top of the berries. Crumble extra butter on top of the batter for an extra creamy treat. Let the mixture sit for 10-60 minutes. Preheat the oven to 375 degrees and bake for about 45 minutes or until fully cooked and a toothpick comes out clean. Eat right away or heat it back up in the morning for an easy, quick breakfast to go.
