We're making some Quinoa Stuffed Peppers a great plant based vegan dish that's full of flavor and nutrients, and pretty cheap to make. Recipe Below.
Recipe:
4 Large Bell Peppers (Cut in half, seeds and pith removed)
1 Cup of Quinoa
1 Cup of Water / Or Vegetable Stock
1 Medium Onion (Chopped)
2 Cloves of garlic (Minced)
1 Cup of Frozen Corn
1 Can of Black Beans
3 tbsp of Olive Oil
1 tbsp of Chili Powder
1 tsp of Garlic Powder
1 tsp of Cumin
1 tbsp of Paprika
1 1/3 tbsp of salt
Optional Garnish:
Avocado
Red Onion (minced)
Lime Wedges
Cilantro (Chopped)
Nutritional Yeast
Instructions
1. Preheat oven to 400 degrees. In a pot, add quinoa, water/stock, and 1 tbsp of salt. Bring to a boil, then lower heat to low to simmer. mix frequently. When water is evaporated, mix and remove from heat.
2. Drizzle and toss peppers in 1 tbsp of Olive Oil and season with a tsp of salt. On a lined, baked sheet cook peppers for about 20 minutes. Then remove from oven.
3. While peppers are cooking, put a large pan on medium-high heat. Add remaining olive oil, and saute onions till they start to brown. Add garlic, and mix. Add beans, and frozen corn. Mix together. Add spices and 1 tsp of salt. Mix well, and fry till corn is no longer frozen. add cooked quinoa and mix.
4. Fill the peppers with the Quinoa mixture. Return to the oven for 15- 20 minutes. Garnish with your favorite toppings such as avocado, nutritional yeast, cilantro, lime juice, and red onions.
