Chicken Vindaloo
Ingredients
Chicken- 800 GMs
Oil- 2 tbsp
Onions - 2 medium sliced
Salt - to taste
Sugar- 1 tsp
For the paste:-
Ginger- 2" piece
Garlic-12-15 cloves
Peppercorns-20-25
Cloves-8-10
Cumin seeds 2 tsps
Coriander seeds- 1 tbsp
Cinnamon I-2" piece
Whole red chillies ( deseeded) 15-20
Goan malt vinegar - 60-80 ml
Method
Dry Roast all the spices and Grind to a fine paste. Heat oil a pan, add the onions and sauté till translucent, then add the paste and fry for about 10-15 mins on a low flame, till it leaves the oil. Add the chicken and brown the pieces in the masala for 3-5 mins. Then add about 1 cup of water, cover and simmer till the chicken cooks.
Serve hot garnished with chopped coriander with bread or rice.
