A nice weeknight meal. Mix up the spices to make it your own!
What You'll Need
For the Salsa:
-1 can of corn (or use fresh)
-1 jalapeno, seeded and diced
-1/3 cup of chopped cilantro
-1 small tomato, diced
-1 small red onion, chopped
-juice of 1/2 a lemon (or whole if your lemon is dry)
-1-2 tablespoons of extra virgin olive oil
-salt and pepper to taste
For the Fish:
-2 Tilapia fillets
-All-purpose flour
-An egg
-Breadcrumbs (about 1/2 cup)
-1/2 teaspoon onion powder
-1/2 teaspoon garlic powder
-1/2 teaspoon paprika
-salt and pepper to taste
-oil for frying
