This is the best tasting cheesecake lemon bars ever! If you do not like cheesecake and lemony desserts, this one will make a convert out of you.
Recipe is as follows;
Preheat oven to 350 degrees
Lightly grease a 13x9x2 cake pan
To make crust:
1. Mix one package lemon cake mix, 1/2 cup vegetable oil and one egg. Press mixture onto the bottom
of the greased 13x9x2 pan. Bake at 350 degrees. remove promptly. Do not overbake as crust will
return to the oven with the cheesecake filling.
To make cheesecake filling:
1.Mix 2 packages of cream cheese(8 oz. each) with electric mixer on medium speed until smooth.
2. Add 2 eggs, 1 cup sour cream, 1/2 cup granulated sugar, grated peel of one lemon and 1 Tbsp.
lemon juice; mix until blended. Pour batter into crust.
Bake at 350 degrees for 35 minutes or until filling is just set in center an edges are light golden brown.
Cool. Sprinkle with powdered sugar. Cut into bars. Store leftover in refrigerator.
