oozing with flavor, and economical. Oh did I say easy??

Whole wheat linguini with sun dried tomato pesto
Ingredients for the pesto:
30 Basil leaves rinsed
4 Oz. pine nuts
3 Oz. Sundried tomatoes
12 Oz. Olive oil
Salt and pepper to taste
Procedure:
1. Combine all of the above in a bowl and mix with either a hand
mixer or food processor. Do not puree, but make sure the ingredients
are well mixed.
For the pasta preparation
Ingredients:
Your favorite pasta
10 Grape tomatoes sliced
3 Scallions chopped
1-2 Oz. Garlic chopped
6 Oz. sliced mushrooms
Olive oil
Preparation:
1. Boil the water, add a little salt and cook the pasta according to
the instructions on the box.
2. While the pasta is cooking, Heat a pan on med-high heat 35 seconds
3. Add about 1 oz. olive oil, add the garlic and cook 35-40 seconds.
4. Add the tomatoes and scallions.
5. Add about 6 Oz. pesto. Heat till bubbly.
6. Strain the pasta and add to the sauce.
7. Plate em up!!
